A classic, easy spaghetti pomodoro recipe featuring cherry and crushed tomatoes, fresh basil, garlic, and a touch of butter for a glossy, flavorful sauce.
Start a pot of boiling water, add spaghetti. In a large fry pan on medium heat add olive oil, garlic and shallots. Cook until fragrant, add in cherry tomatoes and toss together. Cook for 3 minutes until tomatoes start to break down. Add in 14oz of crushed tomatoes, bring to a simmer. Add a pinch of sugar, RPF, salt and pepper. Simmer for ~15 minutes. Add in basil leaves and butter, slowly stir until butter is incorporated. Add in cooked pasta and combine with the sauce. Add in 1 ladle of pasta water and continue to toss the pasta until sauce is glossy. Serve with a little Parmesan cheese on top and enjoy.
